One of the best things about growing fruit and veg is being able to harvest it and immediately cook it and enjoy it.
This recipe could not be any easier. You can adapt it to use any veg you like. I especially like peppers in this dish.
Ingredients
Pasta (for 2)
2 x Courgettes (chopped)
6 x stalks of kale (tough middle stems removed)
4 x stalks of Swiss chard (stems chopped)
1 x large red sweet pepper (chopped)
1/2 teaspoon of garlic granules
Salt and pepper to taste
Small sprinkle of chilli flakes
1 teaspoon of Dijon mustard
1 teaspoon of English mustard
250ml of cream of your choosing (I used oatly, it thickens nicely)
Cook pasta per pack instructions.
Add a tiny amount of oil to your pan (I used olive).
Cook the peppers and courgettes and stems of the Swiss chard together for approx 4-5 minutes on medium heat.
Then add the chopped kale and chard leaves. They will wilt down very quickly.
Next add the garlic, salt and pepper.
Add the cream, and the two types of mustard and stir to combine.
Finally, add the cooked pasta and a little of the pasta water (that the pasta was cooked in as it will thicken the cream a little) and mix.
Stir for a few minutes more to allow the cream to thicken, serve and enjoy!!
