Vegan Friendly Banana Pancakes

These are our favourite banana pancakes. This is usually a weekend breakfast when we take time to relax, have tea and catch up on news etc.

Ingredients - serves 2

2 mashed bananas (use a fork)

4 large spoons of plain flour

I teaspoon of baking powder

1 tablespoon of white wine cider vinegar (this turns the milk into a buttermilk like texture)

Oat milk (pour in gradually and mix to your desired consistency)

1 teaspoon of vanilla extract

Begin by mashing the bananas in your bowl.

Next, add your flour, milk, vanilla and baking powder and mix well. Once you have the consistency you desire (thicker consistency equals thicker pancakes), then add and stir in the vinegar. Leave the mix for five minutes. You will see some small bubbles appear. Now it’s time to cook! 

Add a little oil and a little vegan butter to the pan (the oil should prevent the butter from burning).

Add large sooons of pancake mix to the pan. When you see small bubbles begin to appear (approx 2 minutes in a moderately heated pan) it’s time to flip and cook for a further minute. Then you can serve with maple syrup, fruit, whatever you like!
